Hard Italian cheeses like Parmesan, Pecorino and Romano, are robust cheeses with real continental style. Also known as Grana cheese, they have a hard, granular texture and concentrated bite - a little goes a long way when grated or shaved on soups, pastas, risottos and salads.

Parmesan, and other hard Italian-style cheeses, originated in Northern Italy where they were first made by Benedictine monks during the Middle Ages. The hard and dry texture of the cheese is achieved by gently heating the cheese curd during the cheese making process, releasing as much moisture as possible.

The cheese is formed into a huge drum shape and left to age between 12-36 months, producing a dry, brittle cheese that grates beautifully and literally keeps for years.
